Groen – a Brief History


The Groen story begins with Fred Groen, an immigrant and journeyman coppersmith who, in the 1890s, began a business fabricating tanks and repairing brewery and distillery equipment.  In 1907, he incorporated the company that still bears his name in Elk Grove, Ill., which then was focused on the production of high-quality copper kettles and pressure vessels designed for industrial processors.

From its inception in 1907, Groen became known for product innovation and quality.  For instance, during World War II, copper became a scarce commodity.  So, the company developed the first stainless steel-jacketed kettle, which revolutionized the industry.  Groen made kettles for use on ships during World War II.  In the 1960s, at the same time the company joined the Dover Corporation family of companies, Groen manufactured and introduced the first tilting braising pan in the U.S., and followed that with the industry’s first combination oven designed and built in the U.S.  In addition to manufacturing world class and industry leading kettles and braising pans, Groen also manufactures a complete line of steamers to fit every customer application from connectionless, generator and boiler based models to the most versatile steamer in the industry, the boilerless connected SmartSteam.

Groen remains the market leader in commercial steam cooking equipment and has won “Best in Class” awards from FE&S magazine’s annual survey to 1000’s of operators, consultants, dealers and broadliners.

In the meantime, Groen made its shift from the Midwest to Mississippi, establishing its headquarters near Jackson in 1984 and 33 years later manufactured its 100,000th kettle from this facility.  Its presence has grown since then, including the completion of a 5,000-square-foot training facility in the 1990s and just recently relocated its manufacturing facility in Vicksburg MS.  This relocation brought three different operating companies under one roof and 425 new jobs to the local community.

Corporate headquarters will remain in Conyers, Georgia, where the company emphasizes industry collaboration, customer engagement, and training in its world-class culinary training center.

Wine Preservation With Eye Appeal

Limited square footage is a challenge in restaurants today, and this lack of space can significantly impact wine storage capabilities.

Operators seeking attractive, space-saving and convenient red and white wine storage options for the front or back of house had limited options that didn’t check all the boxes.

With Perlick’s Wine Column Refrigeration, that is no longer the case as operators can now expand up. Requiring just four square feet of space, this high-capacity 84-inch-high wine storage solution’s styling, amenities and finishing options make it an ideal addition for all types of dining and drinking establishments. And best of all, its groundbreaking design allows operations to take full advantage of vertical space.

Perlick’s Wine Column Refrigeration combines function with fashion to make a statement in the front of house. Door finishing options are available, including field-installed stainless-steel overlay for glass doors with full-length heavy-duty handles or a wood overlay made locally using a template provided by Perlick with a choice of handles.

Blue and white LED interior lighting highlights product and slow fades on and off for high-tech visual appeal.

In both the Single and Dual Wine Column Refrigeration models, convertible full extension/display shelves allow for showcasing select vintages. Six full-size bottles are displayed in front, with space for four dessert (half size) wine bottles in the back. With the Dual Zone unit, the display shelf can be placed in either zone. Magnums fit on both display and flat shelves. Shelves are black vinyl dipped to provide vibration protection and protect labels from abrasion, while the soft closing feature protects wine from jarring and agitation.

The Single Zone model provides storage for 94 bottles or 99 bottles when double stacked on the display shelf. The Dual Zone unit accommodates 86 bottles or 91 when double stacked. This unit also has separate compartments that can be set at two different temperatures zones — between 40 and 68 degrees F — for storing both red and white wine. Dual zone models may also be used as a single zone for added versatility.

Single and Dual Zone models operate efficiently using a variable speed compressor as well as R600A refrigerant, an eco-friendly hydrocarbon refrigerant with minimal global warming potential.

With commercial-grade construction for outstanding long-term performance, the Wine Column Refrigeration includes heavy-duty hinges for smooth operation and exceptional durability, heavy-duty springs that ensure secure door closure, and stainless-steel factory-installed sides. Models come standard with field-installed door locks that add an extra layer of security.

Energy-efficient, environmentally friendly operation is achieved with a variable speed compressor, which allows for slower operating speeds, quieter operation and lower energy consumption. Triple pane, Low-E, bronze-tinted glass is energy efficient and protects wine from UV exposure.

The units come equipped with a capacitive touch screen for precise temperature control and access to all refrigerator functions. Auto alarms alert users to temperatures that exceed high or low settings and open doors.
